Chocolate is made from the nuts "beans" inside the Cacao pod. Each Cacao nut has a thin layer of the Cacao fruit pulp on it.
Fresh Raw Cacao has the most nutrients. It is full of many vitamins, minerals, a great source of magnesium,
and natural substances like anandamide that make people feel good.
Typically Cacao is fermented, dried, roasted, and then ground up to make Chocolate.
The nuts average about the size of an almond. The fruit is perishable so it’s not commonly available.
The nut has a thin skin that is sometimes discarded but it's very nutritious and contains Theobromine,
which is a powerful antibacterial against the main bacteria responsible for tooth decay.
The nuts "beans" can be eaten as is right out of the pod, frozen in portions for smoothies, in fruit salads, etc…
They're sweet on the outside (unless they ferment and then the fruit becomes a good healthy vinegar) and bitter Chocolate on the inside.
It's a nice bitterness that most people like. The bitter is from Polyphenols which are anti-oxidant and anti-inflammatory.
Important Note: Cacao fruit flavor, color, and amount of fruit on the bean varies by the Cacao variety and growing conditions.
The fruit color will be white to translucent. We have many varieties and harvest the nicest ripe pods.
But we can't see inside the pod and can't guarantee them.
Cacao is a perishable fruit that can last up to 2 weeks in the pod if kept at about 60F. They can also be dried and roasted.
If taken out of the pod and frozen it can last over a year. If there is a problem please send a photo within 24 hours of delivery.
Pods vary a lot in size. The quantity will be the most that will fit in the box, usually around 4 to 6 pods.
